There should probably be a more exciting name for these little things, but that’s what I heard them called first, so now I can’t think up anything better! Put these in your rotation for snacks….super easy, pretty healthy, and delicious. My kids love them.
I first saw these on a blog somewhere (they have been circulating through various blogs and now Pinterest) and decided to make them mostly for the kids. I liked that there was protein in them and it seemed like they would be more filling than a lot of snacks like crackers or pretzels. I mixed them together, gave one a try and thought “these are WAY better than I expected!” They are really good. I also use them sometimes to satisfy a sweets or chocolate craving. Even one of these bites is decently filling. My kids usually eat 2-3 for a snack. I’m sure as they get older that amount will increase. 🙂
Another nice thing about a snack like this is that they are super adaptable as well, you could mix in almost anything: dried fruit, nuts, different types of chips, nutella, cocoa powder…use your imagination! I almost always add a sprinkle of rice krispies…I love the crunch it gives. I also usually add pecans or almonds. I love that the recipe has flax seed too, which is SO healthy for you – I really should add it to everything! I keep flax seed on hand to add to things, plus I have a couple go-to recipes that call for this ingredient. If you come up with a great new flavor, let me know!
Energy Bites
1 cup quick oats (you can use old fashioned, the texture might be a little different)
1/2-3/4 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini or regular chocolate chips
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour (you can skip this step if you are in a hurry). Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
