Do you like that name? 🙂  I hope it makes you want to make this salsa.  It’s the best.  I love this stuff.  It’s SO easy and really delicious.

There is still some summer left!  Make this for a cookout with friends, Labor Day weekend or just a Monday night.  Mr. Chaos told me today that this is one of his favorite things that I make.  That might prompt me to make it more!  Look at these gorgeous colors…I think this dish epitomizes summer.  I don’t usually make it with cilantro, but I’m sure it would add a lovely flavor to the dish.

I made this for our dear friends Tami and Barry this weekend.  We now live in different states and they came for the day to our new home.  We have a lot in common with each other and one of the most fun things is FOOD!  We love breaking bread together and talking food too.  Aren’t friends the best?  Tami helped me come up with a name for this dish….hope you like it too.

Rainbow Salsa

1 can black beans

1 can corn

2 tomatoes, cut into chunks

2 avocados, cut into chunks

cilantro, optional

bottled Italian salad dressing

Drain the beans and corn.  Rinse the beans thoroughly.  Pour into bowl and add chopped tomatoes.  Add Italian dressing to taste.  I use about 1/4-1/2 cup.  Stir everything together.  Chill for several hours or overnight.  An hour or two before serving, gently stir in avocado.  Add more dressing if desired.  Serve with tortilla chips.

  1. I’ve had this at a friend’s house and it was so good and so FRESH tasting. Ah, so good for summer! I love it! And if you like spice, it’s really good with Garden of Eatin’s Red Hot Blues tortilla chips. They’re blue corn chips with a powdery coating of cayenne. Delish!
