I know, I know…you’re saying “there’s no such thing as yummy brussel sprouts”!  I usually am of the same persuasion, brussel sprouts have never been among my favorite things.  However, thanks to my awesome friend Tami, I have had a change of heart in this area.  She came up with this recipe and I had it at Christmastime and I loved it!  You give these a try and let me know if you change your mind about brussel sprouts too.

Yummy Brussel Sprouts

2 bags of frozen brussel sprouts or fresh brussel sprouts.  Cut the bottom of the sprouts off, then cut in half.  (if you use frozen, thaw the brussel sprouts ahead of time)

4-6 slices of bacon, cut into pieces

1 onion, diced

2 granny smith apples, chopped

salt and pepper to taste

Cook bacon in skillet.  Remove bacon, but leave grease in the skillet (ok, so this part isn’t totally healthy).  Add the onion to the bacon grease and saute until tender.  Add the brussel sprouts; cover and cook until tender, about 15-20 minutes, stirring every couple of minutes.  Add the chopped apples and continue to cook until apples are the texture you prefer.  If you prefer them softer, add them sooner in this process.  Finish cooking and stir in bacon.  Salt and pepper to taste, and serve.
